Rainbow Cupcakes

As it was "Holi" last Friday, I was in a colourful mood from the start of this month. As you know I baked Choco-Rum Cake and also made Irish Cream, but that was for grown-ups.



I made these fun Rainbow Cupcakes for the kiddies to go with the colourful theme of Holi and they just loved it! Although my niece was a bit apprehensive in the beginning by looking at the violet colour at the top ( she wanted a white cupcake) but eventually she succumbed to its colourful charm and devoured couple of them.



I followed a simple Vanilla cupcake recipe for these cupcakes. If you have any favourite vanilla cupcake recipe please feel free to use it and then add the colours.You can also checkout a video tutorial here on rainbow cupcakes.

Rainbow Cupcakes
Ingredients:

1/2 cup (113 grams) unsalted butter, room temperature
2/3 cup (130 grams) caster sugar
3 eggs
1 teaspoon vanilla essence
1 1/2 cups (195 grams) all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (60 ml) milk

Method:
Preheat the oven to 177 degree Celsius and line 12 muffin cups with paper liners.
Beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla essence.
In a separate bowl, whisk together the flour, baking powder and salt.
With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour.
Divide the batter in 5 or 6 equal portions. Add the desired colours . I use Wilton gel colours, you can use any food colours of your liking. Just follow the rainbow theme. ( I forgot to add green colour to my rainbow).
Evenly fill the muffin cups with the batter by following the colour scheme. You can use different piping bags for different colours or you can spoon the batter in the muffin cups. Bake for about 17-20 minutes or just until set and a toothpick inserted into a cupcake comes out clean. Always check a few minutes before the stated baking time. Do not overbake or the cupcakes will be dry.
Remove from oven and place on a wire rack to cool.
