Chicken and Bacon Pie - The Donna Hay Way !

Starting this month, I'm joining the bloghop organised by Zoe, from Bake for Happy Kids, aptly called Cook Like A Star.

 
                                                    

Each month a celebrity chef is chosen and for anyone who wants to participate, just choose a recipe of this chef to cook or bake and share it on your blog with us. The chef chosen for this month's bloghop is "Donna Hay".  As I do not own any recipe book penned by Ms. Hay nor do have any of her magazines in my possession, I did which any self-respecting netizen does...I googled!



I settled for this Chicken and Bacon pie from her site because
a) I had the said ingredients in my pantry
b) The potato crisps on top.
The pie is gorgeously rich in flavour and I loved the crispy potatoes on top. I baked it in a square baking dish instead of individual bowls as suggested in the recipe and I added chilli flakes to it coz I really like it spicy :).

Chicken and Bacon Pie
Adapted from Donna Hay official site 
Ingredients:
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped
4 rashers bacon, chopped
2 x 200g chicken breast fillets, trimmed and chopped
½ cup (125ml) white wine
1 cup (250ml) low fat cream
Salt and cracked black pepper
350g potatoes, peeled
1teaspoon chilli flakes
Melted butter, for brushing

Method:
 Preheat oven to 180°C (355°F). Grease a pie dish, or any oven proof dish you have (approximately 23 cms x 6 cms deep), lightly with butter.
Heat the oil in a large non-stick frying pan over medium heat. Add the onion, garlic, chilli flakes and bacon and cook for 3–4 minutes. Add the chicken and cook for a further 3–5 minutes or until brown. Add the white wine, cream, salt and pepper and cook for 1–2 minutes or until thickened slightly. Spoon the mixture into the oven proof dish and top with the potato slices. Brush with melted butter, place in the oven and bake for 20–25 minutes or until the potatoes are golden and crispy.
As I used low fat cream instead of pouring cream, (I actually don't know what a pouring cream is..I guess they get it in Australia) my pie was a bit runny. My gang didn't mind the runny bit as we had some fabulous garlic bread to dip in the juices but I guess you can add some cournflour if you want a more creamy texture.
